Veal Piccata                    Tuesday, October 27th @6:30    Course Fee $65             

A classic Italian dish.  Thinly pounded veal is dredged in flour and quickly sautéed.  A pan sauce is made from the pan drippings and fresh lemon juice.  Served with some pasta and your friend and family will be saying “grazie”.

The Perfect Pork Roast             Tuesday, November 3rd @6:30   Course fee $65       

Have you ever wondered how to prepare a stuffed pork roast?  Come to this class and learn how to butterfly a pork loin roast, stuff it, and then roast it to perfection.  Top with a flavorful pan sauce, serve with garlic mashed potatoes an you are in for a treat.  Dessert with be a pear cobbler top with cranberry streusel.

Finger Food Fiesta                    Thursday, November 5th @ 6:30  Course fee $65                  

You’ve never been to a fiesta like this before! Come HUNGRY!  Tonight we will learn how to prepare Spicy Crab, Corn & Spinach Quesadillas, and Coconut Shrimp with Mango Dipping Sauce, Chipotle Meatballs, and Puff Pastry “Churros” with Mexican Chocolate Sauce.

A French Quarter Special         Tuesday, November 10th @ 6:30 Course fee $65           

The cuisine of New Orleans is one of my favorites.   In this class, you will learn how to make chicken etouffee which is a classic cagin’ dish.  You will also learn how to make a roux which is a must in cagin’ cuisine. 

Thanksgiving for Two                Thursday, November 12th @ 6:30 Course fee $65       

Thanksgiving this year will be a breeze… On the menu we will have Roasted Turkey Breast with Brandy Gravy & Cornbread Sage Stuffing, Herbed Potato Gratin, Haricots Vert with Browned Butter & Toasted Almonds, and Honey Ginger Apple Croustades.                                                                                                 

The Steak Dinner                     Tuesday, November 17th @ 6:30   Course fee $75         

People have asked me what my favorite cut of steak is.  Without question, it is the ribeye.  This class will show you how to prepare a ribeye like they do in a “steakhouse”.  Couple this great steak with a baked potato and some creamed spinach and you how a great steak dinner.
